With the combination of Margaret River climate and soils there are many similarities between France and here. Hence it is not surprising that the blending of Sauvignon Blanc and Semillon works so well. At Juniper Estate we are aiming to produce a fine elegant complex wine with medium term cellaring potential from this wonderful blend of varieties. The use of “free range yeast, barrel fermentation in tight grained French oak and maturation on yeast lees are used to build texture and structure along layered complexity without dominating the fruit characters and maintaining elegance in the wine.
