Champagne Billecart-Salmon
Nicholas-Francois Billecart founded the House in 1818. He added his wife Elisabeth's maiden name, (Salmon) to his own. Stringent quality has been the key motivating factor behind the Billecart-Salmon family, established at Mareuil-sur-Ay since the sixteenth century. Since it's foundation, the House has always remained in the same family, handed down from father to
son with men who meticulously fashion the product. The current management, seven generations down from the Founder, guarantees the continuation of ancestral traditions. In 1992, Francois Roland-Billecart took over from his father, Jean Roland-Billecart and now manages the House. Billecart-Salmon is one of the few remaining Champagne Houses to be owned by it's original family.
Brut Rose NV: "This is by far my favourite rose, so fresh and mouthwatering. It is made without the addition of red wine (as are most); instead it is a blend of 35 per cent pinot noir, 35 per cent pinot meunier and 30 per cent chardonnay, cold-fermented in stainless steel with
cultured yeasts. The intensely flowery bouquet is followed by a palate crammed with strawberry and dried flower flavours, then a joyous finish."

Brut Reserve NV: "The new packaging emanates from a Paris designer, and has been adopted across the Billecart range. The wine in the bottle is as good as ever, with perfect balance and poise, offering a seamless mix of ripe apple, brioche and a subliminal hint of honey, followed by a lingering finish."
